Breakfast Egg Wrap

This easy breakfast wrap is soft, cheesy, and full of flavor, the perfect way to start your morning! Made with eggs, tomato, onion, and melted mozzarella wrapped in a warm tortilla, it’s a simple but satisfying breakfast that’s ready in minutes.

Ingredients

  • 3 large eggs
  • ½ tomato, diced
  • 1 tablespoon chopped onion (or just a small handful)
  • 1–2 slices of chicken ham, cut into small pieces
  • 2–3 tablespoons mozzarella cheese, shredded
  • 1 tortilla wrap
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. Prepare the Eggs: In a bowl, break the eggs. Add salt and pepper to taste, then beat well until smooth.
  2. Cook the Vegetables: Heat olive oil in a non-stick pan over medium heat. Add the diced tomato and onion. Cook for 1–2 minutes, just until soft.
  3. Add the Eggs: Pour the beaten eggs into the pan over the tomato and onion. Let cook for about 2 minutes, or until the bottom is lightly set but still soft on top.
  4. Add the Tortilla: Place the tortilla directly on top of the eggs, pressing gently so it sticks and covers the whole surface.
  5. Flip the Wrap: Once the eggs are firm enough to flip, carefully turn the whole wrap over so the tortilla is now on the bottom.
  6. Add the Filling: Sprinkle the chopped chicken ham evenly over the eggs. Add mozzarella cheese on top.
  7. Wrap and Finish: Fold the edges of the tortilla to form a wrap. Let it cook for another 1–2 minutes on each side until the cheese melts and the tortilla is golden brown.
  8. Serve: Slice and enjoy warm,  perfect with a cup of tea, coffee, or fresh juice!

Tips

  • You can add spinach, bell peppers, or mushrooms for extra flavor.
  • Swap mozzarella for cheddar or your favorite cheese blend.
